I had another dish completely in mind for last night, but a "super sale" sirloin changed my mind. I already had potatoes, carrots, and onions on hand, so I did a search for an Instant Pot recipe for sirloin tip roast. I found a fantastic recipe from Creme de la Crumb which looked delicious (see their picture to the right--yum, right?) Tiffany's Instant Pot Pot Roast and Potatoes was pretty fast to put together and definitely flavorful. My 3-pound roast took 60 minutes of pressure cooking time, but do allow for the pressure to build, so it was closer to 90 minutes of cooking time. She recommended 10 minutes of time to allow pressure to release naturally, but we were hungry, so I did a quick release to get the food on the table.
Like I said, great flavor. One insight is that the potatoes and carrots were VERY done in 90 minutes. I'm wondering if I might cook just the meat for a time and then instant release the pressure and add the potatoes and carrots to cook again for a shorter time period. That's the only tweak I would make to a simple, satisfying recipe.
