When we lived on the farm, pork steak was a staple for our family. Now that we're not surrounded by hogs, I haven't bought or made pork steak in a LONG time. Then I found this great recipe on Real Simple Good that adapted perfectly to pork steak. Technically, the recipe is Pork Chops with Apple Balsamic Topping, but 12 minutes in the Instant Pot, and another 10 minutes of pressure release was perfect for the larger pork steaks. The only change I would make is the type of balsamic--I've been using it so often that the only flavor I had left was blueberry. OK, but not my favorite with pork. I need to pick up some new balsamic flavors (I used a pecan praline the other day that was fantastic--I bet this would work well with pork steak!)
